It all began in the backyard….

We sat on our horses in the tall grass waiting for the bad guys to approach.  Cowgirl Theresa gave the cue.  Cowboy Thomas and his trusty horse fired peanut butter, I fired marshmallows, and Cowgirl Theresa toasted them into s’mores:) We carried the bandits off to pizza planet where they fell into a deep sleep while we went off to find another adventure.

Where should we go next? These two were full of ideas.

We landed our spaceship in the backyard. Returning with grass stains, dirty toes, and grumbling bellies. It was a good day.

… as we chase after our dreams. At the end of this month, Matt and I will be leaving Cleveland and moving to Boston.  We will be leaving friends, the place where we started as a family, the place where this business first began, a church family, and much much more.  Yet, there is excitement as we follow after a God that longs to satisfy the dreams he has birthed in our hearts.

What will we be doing?  Don’t worry I’ll write the story as it unfolds.  Yes, Cassandra Plummer Photography will continue in Boston.  So send a little birdie to tell your east coast friends and family members that we are on the way.

The dark clouds teased us as Katie and I drove out to the barn.  So did one of the other riders as Katie approached the stables with her hair down wearing a beautiful floral dress and strappy sandals. She wasn’t exactly wearing the normal attire.  Nancy, the horse, recognized her though.  She knew her voice, her smile, and the handful of carrots Katie attempted to hide.Beautiful!!I loved watching her with Nancy. Nancy followed her everywhere as Katie treated her with kisses and snacks. I have never met a horse that doesn’t love Katie…well at least eventually.  Before Katie was barely a teen, she was known as the girl at the barn who could brake the toughest of horses.

In highschool, I thought pizza at his house was so cool.  Every friday Matt’s family had pizza, pop(soda as we call it on the east coast), and popcorn. You see…at my house pizza was always served with salad, a glass of water(never soda), and count on fruit for dessert.

Growing up a sugar, white bread, junk food deprived child you may very will think that I would now need to satisfy all of those cravings. The crazy thing is that I love eating healthy with an occasional sweet. I owe many thanks to mom and to the belly aches I received after stuffing myself at friends house’s and grandma’s.

The sleepover belly ache: they served lucky charms for breakfast and occasionally left over ice cream and birthday cake! I couldn’t believe it.  I remember turning down ice cream thinking they had gone just a little too far, but lucky charms I would have a 1 years worth serving in my cereal bowl.

The grandma belly ache: When I was in second grade my grandparents took me and my brothers to see little rascals in the movie theaters.  I was excited for the movie, but my face went ecstatic when my grandparents said we could pick out whatever candy we wanted.  A whole bag all to myself! I picked starburst and I unwrapped and ate every single one of them by the end of the movie! Arriving home with a monster bellyache.

Maybe it was a whole bag of starbursts in one serving that forever ruined candy ( I said candy not chocolate). Maybe it was the years worth of lucky charms in one bowl that made me love granola and now oatmeal in the morning.

Pizza on Fridays though? That one has stuck, even when the greasy kind served with popcorn gives me a bellyache.Pizza Dough

1 14 oz. pkg active dry yeast

1 3/4 c. all purpose flour

3/4 cup warm water

1 tsp salt

1/2 T olive oil

Stir yeast, 1 T flour, and 1/4 cup warm water together and let stand 5 minutes (should appear creamy).  Add 1 1/4 cup flour, remaining water, salt, and oil. Stir.  Add in 1/4-1/3 cup flour till dough pulls away from the bowl. Let rise 1 1/4 hours.


1 14-15oz can whole tomatoes

2 cloves garlic

2 T olive oil

4 basil leaves

1/4 tsp sugar ( or more to break acidity from canned tomatoes)

1/8 tsp salt

Pour tomatoes into blender to make them chunky.  Cook garlic in oil for 2 minutes. Add everything together in saucepan and simmer for 40 minutes.  Adjust taste with sugar and salt.

Go ahead and make some pizza this Friday!  We bake ours at 425 baking our crust slightly before adding toppings.
