Bruschetta

I loved Grandma’s red sauce because she made it smooth.  Unlike my mom who made it chunky… which absolutely ruined the most amazing invention, recipe ever…spaghetti.  Tomato chunks in any meal made my lips curl down and a gagging sensation begin in my throat.

But did you know that our taste buds change…at least that is what I was told. And I am for one gullible and two living proof.

Because who would have ever thought that I would love chunky sauce, chunky salsa, chunks in my salad, chunks in my soup… and I mean chunks. I would have never eaten this appetizer…

 

That’s right, Bruschetta layered on a thick piece of Paesano.

 

Dear Mom,  Just please don’t make meatloaf when I visit…I don’t think that will ever change.

Tomato Basil Bruschetta

Ingredients:
3 tomatoes, seeded and diced
2 cloves garlic, finely minced
3 tbsp. basil, minced
¼ tsp. kosher salt
Pepper, to taste
1½ tbsp. extra-virgin olive oil
2 tbsp. finely grated Parmesan
